Terroir

Eocene clayey sands.

Culture

Certified Organic by Ecocert; 60 year old Carignan; organic fertilizers; active promotion of biodiversity and enrichment of the microbiome.

Harvest

Syrah on September 7 and Carignan on September 29, 22.

Winemaking

Carignan: 5-day maceration, 50% destemmed. Destemmed Syrah, macerated for 15 days in concrete vats, not crushed. Aged in stainless steel vats for 10 months. Indigenous yeasts. SO2 well below biodynamic standards.

Tasting 

Color: ruby-purple.

Nose: redcurrant, blackcurrant, morello cherry, raspberry.

Fresh, delicious and salivating mouth.

Roasted poultry or red meat, grilled vegetables, pasta with pesto or small goat cheeses.
