The effigy of Saint Celestine adorns the old chapel of the castle. We chose his name for our first vintage of Grenache

North facing, altitude 350 m. Old vines at the top of the estate, 70 years old, on Cretaceous and Miocene limestone.
Culture
Organic conversion started at the end of 2018; organic fertilizers; active promotion of biodiversity, enrichment of the microbiome.
Harvest
Manual, early October; low yield of around 21hl/ha.
Winemaking
95% Grenache and 5% Syrah
3-week maceration in whole bunches, then aging for 15 months for the Grenache (80% in demi-muids and 20% in vats) and the Syrah in 50 hl wooden truncated cone vats. Then blending of the duo for 8 months of final aging in concrete vats. Sulfiting below biodynamic standards. ALC 14.5%.
